Take 200g of loquat stones, place them in the sun to dry for about a week – maybe two. Then put them in a jar/bottle with half a vanilla pod and the peel of a lemon. Add 300ml of vodka (or any other white, strong spirit) and leave in direct sunlight for a couple of months, shaking the jar/bottle on a daily basis.
Strain the vodka mix well and make the mixture up to 1ltr with the syrup. Leave to ‘mature’ for about 3 months and you end up with a sweet nutty-flavoured liqueur – not dissimilar to amarretto.
