Spicy Lentil Burgers

A recipe for everyone to enjoy – feel free to mess around with the spices to suit your own taste.

Ingredients :
250g split red lentils (dry weight)
Black pepper
Chili powder
Ground Cumin
Grated Ginger
Minced Garlic
Grated Carrot
Minced Onion
1-2 raw eggs
Sunflower Oil (for frying)

Start by boiling the lentils and drain well. When the lentils are cool enough to work with, add some breadcrumbs – one handful at a time – until it forms something resembling shortcrust pastry. Add the onion, garlic, ginger, carrot, herbs and seasoning to your own taste. Add an egg (or two) to bind the mixture together.

Take handful of the mixture and work it into a ball with your hands. Flatten the ball into an oval shape.Shallow (or deep) fry until golden.
Serve – well – however you want, really! In a bun, on their own, make smaller ones to serve as nibbles – it’s up to you. I served ours with some chips and salad.
